Chicken Cheese Quiche

Hello my dear bloggy bums!! Muslims all round the world(including me) are celebrating the holy month of Ramadan, and fasting. The other fantastic thing happening, as we all know, is football.Hope all the fans are enjoying themselves these days with popcorn tubs; I sure am(Minus the tubs since I’m  fasting during the day)! 🙂

Today I did a chicken-cheese quiche for iftar(breaking of fast), which every one in my good ol’ family enjoys. It was yummy, because..well there was cheese, chicken and flaky pie crust in there. You can’t go wrong with all that good stuff, can you? (Unless you’re an absolute kitchen Klutz like my baby sister who manages to torpedo almost every dish she makes).

For this recipe, I’m using the traditional flaky homemade butter-based pie crust, unlike the banana cream pie recipe for which I used a ghee based pie crust. Quiches are best when the crust is absolutely flaky and have that yummy rich buttery taste! Of coarse you can use Crisco instead. But….. once again, “It’s best with butter”.

Ingredients

1/2 cup fried and shredded chicked

2 green onions chopped

1 red onion, chopped with layers separated

1/2 bell pepper chopped

2 + 1 egg(s)

1+ 1/4 cup cheddar cheese grated

1/2 cup heavy cream

1 9-inch pie crust (unbaked)

1 tsp powdered red pepper

1 tsp black pepper powder

salt to taste

2 tbsp butter

Instructions 

Preheat your oven to 350 degrees.

In a pan add two tbsp butter and fry the red onions until transparent. Add the chopped bell pepper, shredded chicken and green onions. Add a bit of salt, half a teaspoon black pepper and half a teaspoon red pepper. Stir fry. Then dish out and let it cool,

In a bowl whisk two eggs and add  1 cup grated cheddar cheese to it.

In another bowl whisk the heavy cream, and an egg. Add the remaining half tsp(s) of black and red pepper to it and whisk. Lastly add the remaining 1/4 cup cheddar cheese and whisk again.

Take out your pie plate. Spray it with non-stick vegetable oil. Then place your pie crust over the plate. Crimp the edges. Now add the chicken vegetable filling over the bottom of the pie crust.

The top it with the cheese-egg mixture and spread it over the vegetables with a spoon. Lastly seal the deal by topping it all with the cream-cheddar-egg mixture.

Set the quiche to bake in the preheated oven.Bake for 35-40 minutes until firm and golden brown on top.

Cake Doughnuts

These are the yummiest tasting, best kind of doughnuts ever. Not to mention, super easy as well. You can dust icing sugar over doughnuts, a strawberry topping or a chocolate one. Personally my favorite has always been a quick caramel-chocolate topping over these amazingly perfect doughnuts.

Cake Doughnuts (6 doughnuts)

1 large egg, room temperature

1/3 cup  powdered sugar

1 1/2 cups  all-purpose

1 1/2  tsp baking powder

A pinch of salt

2 tbsp lukewarm butter

1/4 cup milk

Caramel-Chocolate Glaze

4 oz semi-sweet dark chocolate of your choice

3 tbsp salted butter(can use unsalted as well)

4 tbsp sugar

4 tbsp unsweetened cocoa powder

4 tbsp water

Doughnuts:Instructions

Sift together the baking powder,salt and flour.In the bowl of your electric mixer(or with a hand mixer), beat the egg and sugar until creamy and yellow.  Then slowly add the flour/baking powder/salt combo.Add the lukewarm butter and milk. Mix till a soft dough forms.It will be sticky. Let the dough sit there for 10 minutes to make it smoother.

Flour your work surface generously and roll out your dough approx 1/4 inch thick with a rolling pin. Then cut out your doughnuts with a doughnut cutter. Place the doughnuts on a floured surface(room temperature) while your oil heats up.

On medium heat put in the doughnuts n a deep fryer/wok/frying pan. Deep fry the doughnuts. Initially they will sink but then will inflate and rise to the surface.  Take them out when both sides are light-brown in color. Let them cool on a paper towel while you make the glaze.

Glaze Instructions

On low heat put the water and sugar. Let the sugar melt. Add in the cocoa powder and butter, Stir these with a spoon. Lastly add the dark chocolate and let that melt in the caramel mixture. Cool to room temperature.

Dip your doughnuts into the glaze and víola….. the doughnuts are ready to serve. Put on some sprinkles(kids love them!).

Crispy Vegetarian Samosa

Ingredients(Serves 6)

For cover

  • 1 1/4 cup refined flour
  • salt to taste
  • 2 tbsp ghee/clarified butter

For Filling

  • 2 large potatoes boiled(slightly mashed with a spoon)
  • 1 tsp crushed dried cumin seeds( to dry put on a low heated frying pan for a while.Crush with rolling pin)
  • 1/2 tsp crushed dried pomegranate seeds(to dry put on a low heated frying pan for a while.Crush with rolling pin)
  • salt to taste
  • 1 tsp paprika
  • 2 tbsp tamarind paste
  • 1/2 tsp red chili powder
  • 2 tbsp ghee/clarified butter(for stir frying)
  • 3 green chilies chopped finely

How to go about it(Cover)

  • Knead the flour, clarified butter and salt with a little water to make a firm dough. Cover this with a wet  cloth and set aside while we prepare our filling.

How to go about it( Filling)

  • Set a frying pan on medium heat. Add the clarified butter. Add the potatoes and the rest of the ingredients in this pan. Stir for a while. Then dish out the filling.

Deep fry all samosas .Initially fry on medium heat for 5 minutes. This will cook the dough inside out.

Then raise heat levels, and on high flame, cook until brown and crispy.

KFC Zinger Burger Homemade!

 I vividly remember that my childhood was full of KFC. I loved my kids meal.Actually at that age I wasn’t interested in food of any kind,the main attraction was the toy that came with kids meal. For a long long time we went no where else but KFC to eat out,because I refused to go anywhere else. Being the only child for a large period of time,my parents  indulged me until I was spoiled rotten. This led to me having huge expectations. I expected cell phones to spring out of my KFC goody bag. And since the cell phones never sprung out,my spirits were dampened and I acted grumpy until my parents left the place. According to my mother,I was a difficult child to live with. That is until my next hellion( demon) of a sister was born. I love her,but seriously…..Sometimes I want to dump her in a trash can and cover the lid( Harsh Ayesha….harsh). Then the third hellion came, and I was no longer spoiled. I became, well…….”me”.  Anyway, I forgot to mention that I almost always had a Zinger burger in my kids meal. We don’t really go to KFC any more. It’s Nandos or Arizona Grill now. However we still have our occasional KFC Zinger,one made at home!!

How to Go About it

  • 1/2 kg boneless chicken cut for zingers
  • Salt to taste
  • 1/2 tsp white pepper
  • 1/2 tsp mustard powder
  • 1 tsp Worcestershire sauce

       *****Marinate Chicken in above spices and leave for 1 hour*****

For Coating

Coating One (Whisk the following in a bowl)

  • 1/2 cup milk
  • 1 egg beaten
  • 3 tbsp all-purpose flour
  • 1 tbsp cornflour
  • 1/2 tsp white pepper
  • 1 tbsp salt
  • 1/2 tsp baking powder

Coating Two (Mix the following in a bowl)

  • 1/2 cup cornflour
  • 1/2 cup all-purpose flour

Coating Three

  • Crushed Cornflakes

Coating and Frying Instructions(After Chicken has been Marinated)

  • Roll each of the chicken cuts in Coating one,then in coating two and lastly in cornflakes.
  • Deep fry in a wok/pan/deep fryer.Cover with a lid and deep fry for 15-20 min. KFC uses pressure cookers.But using pressure cookers inside the house is not recommended.
  • Deep fry until golden-brown.

Delectable Low Calorie Pizza!

    I was a little low today. Maybe because of a dream-cum-movie( It was hours long!) I watched while asleep. I wouldn’t call it a nightmare. It was, for the want of a better word,’zany’. The kind of bizarre film that leave you feeling lethargic. Anyway I should be happy that it wasn’t Paranormal Activity 5. It could have been, given that I read a lot of true horror stories yesterday. An American haunting(truth behind it) and The exorcism of Emily Rose(truth behind it) being just two of them. Pictures never lie, words may or may not. These stories are accompanied with pictures of the horrifying details.I cried and even prayed for the alleged victims. Do we ever wonder how blessed we are,like ever?  If we look at those who actually suffer, we might stop whining about our so-called miserable lives and start being thankful for once. A lot of us don’t even know the S of suffering, and God forbid that we ever do. Its about time we began looking at the fuller part of the glass, rather than moan about the empty space. Anyway, I had to do something to get rid of yesterdays lethargic sadness. For that I made a feel good pizza today. It was the most absolutely delicious one ever. And there was no guilt, since it was low-fat. Not overloaded with cheese like pizzas usually are. To accompany the pizza I also read a lovely novel ” I’ve got your number” by the absolutely marvelous, my all-time favorite author Sophie Kinsella. For those of you who don’t know Kinsella, I pity you. She writes such light, witty ,amazing novels and has such a perfect comic timing. I was left absolutely refreshed and revitalized after the pizza and the novel!

What you Need(For Dough)

  • 2 cups flour
  • 1/4 tsp salt
  • 1 tbsp yeast
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 2 tbsp Yogurt

Method(Dough)

  • Dissolve sugar and yeast in 4 tbsp warm water
  • Mix rest of the ingredients
  • Knead to make a soft dough(With warm water)
  • Cover it with cloth. And leave it to rise for 1 hour.
  • After one hour roll out the dough. Personally I prefer a thin crust over a thick one.But roll out as you wish.

What you need(for Topping)

  • 1 small onion diced
  • 3/4 cup boiled and shredded chicken
  • 1 tbsp butter
  • 2 tbsp all purpose flour
  • 1 cup milk
  • salt to taste
  • 1 tsp black pepper powder
  • 1 tsp oregano powder
  • 1 capsicum diced
  • 1 carrot diced
  • 2 spring onions chopped
  • 4 green chilies sliced 
  • 1 egg beaten

Method( Topping)

  • Melt butter, add onions,cook till transparent.Add capsicum,salt,black pepper and oregano.
  • Add flour. Stir and cook for a minute
  • Add milk and cook till it thickens.
  • Add green chili,spring onion,carrot and shredded chicken.
  • Leave this filling to cool.

For Garnishing(Sprinkle over Topping before and NOT after baking )

  • 5 tbsp Cheddar cheese. Yes that’s all the cheese in our pizza. Just slice it all over the pizza randomly.
  • One small tomato sliced. Place slices randomly over the pizza.

Tip

* I bake the rolled out dough for 10 minutes BEFORE applying topping on it. The crust is firmer and tastier. The rest of baking will take place after applying the topping( that is 10-15 minutes more). Overall 20-25 minutes.

Cheesy Bread Rolls !

This was my first time making these rolls. These are a medley of spices I love. Cheesy,chicken-ey deliciousness packed in little envelopes. These guys were so utterly lovely and amazing that I had to share them with you! Lastly I’ll just thankGod that they turned out so well, and take a huge chunky bite dipped in ketchup to tantalize my taste buds!…I’m lovin’ it ❤

What you Need(For Dough)

  • 1 tsp black pepper powder
  • 1 tsp oregano powder

  • 4 green chilies sliced 
  • 1/2 cup cheddar cheese shredded
  • 1 egg beaten

Method( Filling)

  • Add flour. Stir and cook for a minute
  • Add milk and cook till it thickens.
  • Add green chili,spring onion,carrot and shredded chicken.
  • Leave this filling to cool.

Putting it all together

  • Put little amount of filling on the broader side of each triangle. Stretch each triangle a little.

  • Sprinkle generous quantities of cheddar on each.

  • fold and brush with egg.Folding these is somewhat like folding croissants.
  • Set them to bake on a lightly greased baking tray.
  • Bake for around 20 min or until golden.
