Skewered Mutton Boti Tikka!

I’ve been quite busy these days with winter holidays(It sounds a bit ironic actually). We are enjoying these days so much at my house. Everyday is a festive day with chatter, chai, sweet treats and savory as well. My mother has been cooking a lot too. And I’ve been meaning to share some of her recipes as well but always get short on time. Time is somewhat magical. I mean only yesterday I was eight(Not really), and just wanted a doll in pram( once I got it I moved on to something else), and was happy to lie for hours on a carpet with my head in mom’s lap( until the head grew big and she told me that it tires out her legs), listening to fairy tales……Oh God. Look what I’m writing now,and what I was supposed to write about.New year resolution: Ayesha Stop bantering.Focus,focus.(Will try, honestly!) Anyway, presenting mom’s mutton boti tikka recipe now. Which I helped her out with since it’s not a one person thing. It was gorgeous and delicious. Wish I had saved some botis for today as well.

KFC Zinger Burger Homemade!

I vividly remember that my childhood was full of KFC. I loved my kids meal.Actually at that age I wasn’t interested in food of any kind, the main attraction was the toy that came with kids meal. For a long long time we went no where else but KFC to eat out, because I refused to go anywhere else. Being the only child for a large period of time,my parents  indulged me until I was spoiled rotten. This led to me having huge expectations. I expected cell phones to spring out of my KFC goody bag. And since the cell phones never sprung out,my spirits were dampened and I acted grumpy until my parents left the place. According to my mother,I was a difficult child to live with. That is until my next hellion( demon) of a sister was born. I love her,but seriously…..Sometimes I want to dump her in a trash can and cover the lid( Harsh Ayesha….harsh). Then the third hellion came, and I was no longer spoiled. I became, well…….”me”.  Anyway, I forgot to mention that I almost always had a Zinger burger in my kids meal. We don’t really go to KFC any more. It’s Nandos or Arizona Grill now. However we still have our occasional KFC Zinger, one made at home!!

The Chocolate ‘Moo’ Cake

Cows are lovely creatures. Innocent, dewy eyed and beautiful….. And really, who am I kidding? They are pretty dangerous as well. Our Punjabi maid comes from  the farming and animal rearing region of Punjab. In fact, she and her family used to reside on the farm. She used to take cows out for galloping and feeding in the fields. There are countless stories of cows breaking free of the rope and running away. My maid sometimes singlehandedly and sometimes with a group of other people used to get the cow back from where ever it chose to hide. And now moving from cows to………well yes…the cake. The cows were the inspiration for this cake. The Lovely Chocolate ‘Moo’ Cake.

Delectable Low Calorie Pizza!

I was a little low today. Maybe because of a dream-cum-movie( It was hours long!) I watched while asleep. I wouldn’t call it a nightmare. It was, for the want of a better word,’zany’. The kind of bizarre film that leave you feeling lethargic. Anyway I should be happy that it wasn’t Paranormal Activity 5. It could have been, given that I read a lot of true horror stories yesterday. An American haunting(truth behind it) and The exorcism of Emily Rose(truth behind it) being just two of them. Pictures never lie, words may or may not. These stories are accompanied with pictures of the horrifying details.I cried and even prayed for the alleged victims. Do we ever wonder how blessed we are, like ever?  If we look at those who actually suffer, we might stop whining about our so-called miserable lives and start being thankful for once. A lot of us don’t even know the S of suffering, and God forbid that we ever do. Its about time we began looking at the fuller part of the glass, rather than moan about the empty space. Anyway, I had to do something to get rid of yesterdays lethargic sadness. For that I made a feel good pizza today. It was the most absolutely delicious one ever. And there was no guilt, since it was low-fat. Not overloaded with cheese like pizzas usually are. To accompany the pizza I also read a lovely novel ” I’ve got your number” by the absolutely marvelous, my all-time favorite author Sophie Kinsella. For those of you who don’t know Kinsella, I pity you. She writes such light, witty ,amazing novels and has such a perfect comic timing. I was left absolutely refreshed and revitalized after the pizza and the novel!

  • 3/4 cup boiled and shredded chicken
  • 1 tbsp butter
  • 2 tbsp all purpose flour
  • 1 cup milk
  • salt to taste

For Garnishing(Sprinkle over Topping before and NOT after baking )

  • 5 tbsp Cheddar cheese. Yes that’s all the cheese in our pizza. Just slice it all over the pizza randomly.
  • One small tomato sliced. Place slices randomly over the pizza.

Tip

* I bake the rolled out dough for 10 minutes BEFORE applying topping on it. The crust is firmer and tastier. The rest of baking will take place after applying the topping( that is 10-15 minutes more). Overall 20-25 minutes.

Mac and Cheese!

If I was a cartoon character, I’d be Jerry. Yes Jerry from the good ole Tom and Jerry. Not because I’m too clever by half  (that too) but because I adore cheese. I’ll even fight menacing cats and  huge dogs to get to a nicely treated chunk of Swiss cheese. Or any kind of cheese for that matter. Cheddar cheese for example is another Swiss  cheese for me. Forgive me cheese connoisseurs for saying that. I really am basic when it comes to explaining my choices. While preparing a pizza, lasagna, mac n cheese etcetera etcetera I do pop a huge chunk of cheese in my mouth. I roll it around till the tang settles deeply into my taste buds. Then I chew it bit by bit. My canines, molars and premolars gnawing cheerfully. I savor my cheese to the last particle. Then, I lick my lips in a classic 80’s villain faced-with-pitiful-victim style . A suitable end to a lovely odyssey.

Hot N’ Sour Soup

What do I want? I want a real winter. A real winter with real snow. A lot of you guys might be questioning yourself, “Is she mad?”. Don’t judge me, hear me out. Unlike most of you, I live in a place which has summer for ten WHOLE months. The last two months are fake winters, that is winters without snow. I think wintery-winters are lovely. And its not just the snow. Its the warm blankets, hot food, coffee, chocolate, nuts, soup, gossip and laziness that attracts me. I’m attracted to cold mist and cold hands. Glad to have a break from the moisture and sweat that marks the other months. Maybe I should consider myself lucky that we often end up with the best of both seasons. Even the summer heat is never smoldering, its just there too much of the time. Does that mean we don’t have spring and autumn? Probably, since I never spotted the difference. Either it’s cold or it’s warm. It was  cold yesterday, I could feel the winter on my nose. The best way to feel winter on your nose it to touch it. The feeling is like porcelain left in the fridge for a while. I wonder if it can crack as well if I pinch it. My sister told me to try it out! Obviously I did not 😛 Anyway. I made hot n’ sour soup for the two of us yesterday. We love this soup. Its the “sssss soup”. All you can do after eating it is stutter and gasp, from the hot and spicy-ness of it! And its super easy, super delicious, super everything good!

Chocolate-Chocolate Cupcakes!

I went on a cupcake baking spree for a family get together. I removed one batch after another from the oven . Needless to say, ended up making more than enough to feed the clan. And made them super chocolatey, by first covering the naked chocolate cupcakes with chocolate ganache, and then writing on them with white chocolate frosting. They were yummy, and were gone in minutes (Like I’d already predicted :P) If someone asks me the one thing that shall never tire me out? I’d be quick to say “Chocolate cupcakes”.I’m not a big fan of cream over cupcakes. No thank you, I’d rather have chocolate over mine.

There’s always one Saturday night when I’m up late and the rest of the house is asleep. Inevitably I get hungry, and I want something instantly. No, I won’t order something from Pizza Hut or Nandos. I’d rather go to the kitchen and make my supper spicy spaghetti. I can’t say enough about them. I love them and will have them any time.Especially with a side dish of mash potatoes! Ricotta Cheese DIY

I made ricotta cheese for my Ricotta Cheese Meaty Pizza the other day and I was amazed at how easy this was. The only thing bad about this is that if you aren’t careful, cheese bits or milk can stick to the edges of the pan in which you’re cooking cheese. And they are very difficult to remove.

All you need:

  • 4 cups whole milk (Not low fat and other varieties)
  • Juice from one large lemon(or 2 tbsp white distilled vinegar)

Photo1421

  • 1/2 tsp salt
  • 4 tablespoon fresh cream(Optional)

Photo1420

  • A bowl for straining out the liquid

Photo1372

  • A cheese cloth/ muslin

hjlj

Photo1375

How to go about it

  • Whisk together milk and cream with a stand mixer. Or use the milk only.
  • Add Salt and whisk
  • Set these on a low heat in a pan.
  • Add vinegar/ lemon
  • Keep stirring.Prevent Cheese/milk from sticking to the edges of the pan.
  • Pour the material in the pan into a cheese cloth.Tie it.
  • Keep this on a straining bowl.
  • Your Cheese will be ready in half an hour after liquid drains out. If you want firmer slabs of cheese, allow the cheese to stay in the cloth for 2 hours or even longer.

Beef Skewered Kebabs : Its Barbecue Time!

Family get togethers are perhaps the best time to get elaborate with food. Enhancing the “redness” quotient by grilling kebabs, and a lot of spices with it makes simplest of gatherings moments to be remembered. I am someone who loves the idea of  barbecuing with family. Loads of pointless and not-so-pointless chatter reminds me of how much I love my family and how happy we are whenever we are together. This is also a time when i email a big thank you note to God from the computer of my heart, thanking Him for his numerous blessings 🙂 Here, before I totally get off the topic. I shall go ahead and share the recipe for making amazing Shish/Seekh/Grilled Kebabs.
