Chicken Cheese Quiche

Hello my dear bloggy bums!! Muslims all round the world(including me) are celebrating the holy month of Ramadan, and fasting. The other fantastic thing happening, as we all know, is football.Hope all the fans are enjoying themselves these days with popcorn tubs; I sure am(Minus the tubs since I’m  fasting during the day)! 🙂

Today I did a chicken-cheese quiche for iftar(breaking of fast), which every one in my good ol’ family enjoys. It was yummy, because..well there was cheese, chicken and flaky pie crust in there. You can’t go wrong with all that good stuff, can you? (Unless you’re an absolute kitchen Klutz like my baby sister who manages to torpedo almost every dish she makes).

For this recipe, I’m using the traditional flaky homemade butter-based pie crust, unlike the banana cream pie recipe for which I used a ghee based pie crust. Quiches are best when the crust is absolutely flaky and have that yummy rich buttery taste! Of coarse you can use Crisco instead. But….. once again, “It’s best with butter”.

Ingredients

1/2 cup fried and shredded chicked

2 green onions chopped

1 red onion, chopped with layers separated

1/2 bell pepper chopped

2 + 1 egg(s)

1+ 1/4 cup cheddar cheese grated

1/2 cup heavy cream

1 9-inch pie crust (unbaked)

1 tsp powdered red pepper

1 tsp black pepper powder

salt to taste

2 tbsp butter

Instructions 

Preheat your oven to 350 degrees.

In a pan add two tbsp butter and fry the red onions until transparent. Add the chopped bell pepper, shredded chicken and green onions. Add a bit of salt, half a teaspoon black pepper and half a teaspoon red pepper. Stir fry. Then dish out and let it cool,

In a bowl whisk two eggs and add  1 cup grated cheddar cheese to it.

In another bowl whisk the heavy cream, and an egg. Add the remaining half tsp(s) of black and red pepper to it and whisk. Lastly add the remaining 1/4 cup cheddar cheese and whisk again.

Take out your pie plate. Spray it with non-stick vegetable oil. Then place your pie crust over the plate. Crimp the edges. Now add the chicken vegetable filling over the bottom of the pie crust.

The top it with the cheese-egg mixture and spread it over the vegetables with a spoon. Lastly seal the deal by topping it all with the cream-cheddar-egg mixture.

Set the quiche to bake in the preheated oven.Bake for 35-40 minutes until firm and golden brown on top.

Classic Lasagne!

   Ello! ghhhhh…….testing,testing….Hello ladies and gentlemen, hope you’re rocking your fancy bottoms these days. I haven’t participated  in many WordPress challenges in the past .However the latest Cliffhanger challenge (Weekly Challenge) is something that is highly appealing to my mind which is always on the edge of…err..a cliff.  So today I’m going to do something bad. Like really really bad. As in “bad Toby bad Toby” and banging-the-head-on-lampshade bad.(For those who are hanging.This is a reference  to Toby in Harry Potter). 

   Today I present my version of Lasagna.Lasagna which also happens to be one of my favorite dishes. Because I dig a fork into it and the cheese oozes out. It has layers of sauteed chicken and spices. A medley of beautiful veggies. There’s something awesome about bell peppers, bits of carrot,spring onions resting over a bed of noodles,cheese and cheese sauce. Hot and Spicy from oven….this is mon salwa from the heavens….!

Mac and Cheese!

If I was a cartoon character, I’d be Jerry. Yes Jerry from the good ole Tom and Jerry. Not because I’m too clever by half  (that too) but because I adore cheese. I’ll even fight menacing cats and  huge dogs to get to a nicely treated chunk of Swiss cheese. Or any kind of cheese for that matter. Cheddar cheese for example is another Swiss  cheese for me. Forgive me cheese connoisseurs for saying that. I really am basic when it comes to explaining my choices. While preparing a pizza, lasagna,mac n cheese etcetera etcetera I do pop a huge chunk of cheese in my mouth. I roll it around till the tang settles deeply into my taste buds. Then I chew it bit by bit. My canines, molars and premolars gnawing cheerfully. I savor my cheese to the last particle. Then, I lick my lips in a classic 80’s villain faced-with-pitiful-victim style . A suitable end to a lovely odyssey.

Mac N’ Cheese Ingredients:

  • 1 1/2 cup boiled and shredded chicken
  • 2 cups cheddar
  • 1/4 packet macaroni boiled
  • 1/2 onion chopped
  • 1/2 tsp oregano
  • salt to taste
  • 1 tsp black pepper powdered
  • 1 cup milk
  • 1 garlic clove minced
  • 2 tbsp all purpose flour
  • 3 tbsp + 1 tbsp butter

Mac N’ Cheese How to:

  • In a pan melt butter  on low heat
  • Add onion and garlic clove and stir.
  • Add milk and whisk.
  •  Season with black pepper, salt and oregano.
  • Let the milk thicken.
  • Fold in the shredded chicken,boiled macaroni and cheese.
  • Empty the pan contents into a baking dish.
  • spread  the 1 tbsp butter all over it.
  • set to bake.
